When life hands you lemons, accept them with open arms and make… lemon bars!  Well, maybe not actual lemon bars that are drenched in sugar and fat - but I know something pretty darn close to it!

In this week’s Made Fit TV episode, I demonstrate a creative way to make sugar-free, fat-free, protein-packed, fiber-filled lemon bars. Check out the video above to learn how to make them and print out the info below as your guide in the kitchen.

Guilt-Free Protein Lemon Bars

Ingredients: 1/2 cup vanilla-flavored protein powder (NiyoPRO works for me), 1/2 cup oats, 1/2 cup brown rice flour, 6oz non-fat Greek yogurt, 1/2tsp baking powder, half packet of 2qt. dry sugar-free lemon drink mix, 1/4 cup water, 1/2 cup egg whites, 1 tbsp lemon juice

  1. Pre-heat oven to 350 degrees
  2. Mix together all of the wet ingredients, including the Greek yogurt, until well blended
  3. Add in all the dry ingredients and blend together for about a minute, mixing with a spoon to scrape edges of bowl
  4. Grease an 8×8 baking pan or glass baking dish with non-stick cooking spray (I like 1tsp coconut oil!)
  5. Bake for about 20 minutes (check at 18 minutes in case)
  6. Allow to cool for 5 minutes and then cut into 8 equal bars

Serving size = 1 bar (for a meal replacement, eat two!)

1 bar = 90 Calories, .5g Fat, 13g Total Carbohydrates, 1.5g Fiber, 1g Sugar, 10g Protein
