When life hands you lemons, accept them with open arms and make… lemon bars! Well, maybe not actual lemon bars that are drenched in sugar and fat - but I know something pretty darn close to it!
In this week’s Made Fit TV episode, I demonstrate a creative way to make sugar-free, fat-free, protein-packed, fiber-filled lemon bars. Check out the video above to learn how to make them and print out the info below as your guide in the kitchen.
Guilt-Free Protein Lemon Bars
Ingredients: 1/2 cup vanilla-flavored protein powder (NiyoPRO works for me), 1/2 cup oats, 1/2 cup brown rice flour, 6oz non-fat Greek yogurt, 1/2tsp baking powder, half packet of 2qt. dry sugar-free lemon drink mix, 1/4 cup water, 1/2 cup egg whites, 1 tbsp lemon juice
- Pre-heat oven to 350 degrees
- Mix together all of the wet ingredients, including the Greek yogurt, until well blended
- Add in all the dry ingredients and blend together for about a minute, mixing with a spoon to scrape edges of bowl
- Grease an 8×8 baking pan or glass baking dish with non-stick cooking spray (I like 1tsp coconut oil!)
- Bake for about 20 minutes (check at 18 minutes in case)
- Allow to cool for 5 minutes and then cut into 8 equal bars
Serving size = 1 bar (for a meal replacement, eat two!)
